Experience

As Studio Manager, Fabien Riviere oversees the daily operations and management of the resorts' signature fine dining restaurant. Mr. Riviere enjoys delivering a dream to guests, a night to remember.

Mr. Riverie joined Montage in 2012 with over twenty years of industry experience, and extensive Chef and wine knowledge. Prior to Montage, Mr. Riviere worked as the Director of Felix Restaurant at the Penninsula Hotel in Hong Kong. Here his duties were to ensure the highest level of standards and consistency in all aspects of management.  

Mr. Riviere was born and raised in France and spent several years working with Alain Ducasse in Monaco who taught him many valuable lessons, including an appreciation for flavor, attention to detail, eye for luxury, and a gentle and respectful handling of guests.

Troy Smith, Sommelier
Earning the Advanced Sommelier Diploma from the American Chapter of the Court of Master Sommeliers, Troy Smith is a sommelier and beverage manager at Montage Laguna Beach.

Equipped with in-depth knowledge gleaned from more than 10 years in the wine industry, Mr. Smith oversees the selection, purchasing and storage of wines for the entire resort. He also facilitates all ongoing associate wine training.

In addition, Mr. Smith oversees the ambitious wine program for the resort's three restaurants, including its signature restaurant Studio's impressive 2,500 wine selections. To that end, he is instrumental in selecting Studio's approximately 50 wines by the glass; working in tandem with Studio Executive Chef Craig Strong and the Studio sommelier team to present wine pairings for each item on the private Chef's Table and tasting menus.

Previously a sommelier at The Phoenician Resort in Scottsdale, AZ, Mr. Smith has also served as sommelier at the Ventana Room at Loews Ventana Canyon Resort in Tucson, AZ.
